When life gives you Avocados……….

When life gives you avocados, it is time to make guacamole my friends!  We are in full-blown summer so I thought I would mix it up a bit.  It’s hot, I mean real hot.  Most mornings when I am out the feel like temp is between 85-87 degrees!  UGH!  So here is the sweaty fun down:

Sunday:  REST

Monday:  Yin Yoga

Tuesday:   Pace ladder

Wednesday:  Lunch time yoga

Thursday:  3 mile tempo

Friday:  REST

Saturday:  5 easy miles

Total:  12 miles ran AVG HR 149-161

Let’s get back to the avocados shall we?  It is also Meatless Monday and one of the things I love about summer is making fresh guacamole.  Everyone likes it a little different but I am going to share my basic recipe:

Avocado  (depends on how many are ripe)

Limes ( I use key limes because they grow in my yard too)

Red onion  (you be the judge)

Handful of fresh chopped cilantro

Diced tomato (for me the more the merrier)

Once I dice the avocado and add all the other ingredients (not the tomato)  I take my handy Mojito smasher and smash all the ingredients together to my desired consistency.   Add salt and pepper then spoon in the tomato.  It is that easy!  You can add based on what’s available in the frig.  Want it creamier?  Add a little greek yogurt.  What is hot?  Add some chipotle pepper or ground cumin.

All you need now is a cold drink and a bag of chips!  I am telling you- this I could eat all summer long!    Speaking of cold drinks, I am loving some of the rose wines out this summer!  I am usually not a pink wine drinker but these are kind of fun!  My favorite so far is from Cooper’s Hawk winery. It was the feature wine for May and I have been hooked ever since!

    Ahh..Running in the heat is so much fun, said no one ever! I feel like the whole country is just hot and humid right now. I would love some relief, but I know thats not coming until Fall, lol.

    Your guac looks awesome 🙂 Confession, I have never made guac ever at home. I go up the street and order it! I love guac any way I’ve had it, but spicy with a lot of onion works for me!
    The early morning heat is tearing me up at home..I am impressed you can still push out the speed work.

      The speed work is getting tougher and tougher! You should try making guac at home sometime- super easy and you can add all the onion you want!

  4. I just recently got my salsa garden in the ground (better late than never), so it will be awhile before I get creative in the kitchen. I have never done much with avocados…..I need to give them a try, huh 😉

  5. I LOVE guac but have never tried to make it myself! Avocados still intimidate me in the kitchen, haha!

    I’m so loving the summer and trying to be as carefree as possible! I enjoy so many different drinks but have been craving some sangria or white wine lately!

    I add garlic and corn kernels to my guacamole, along with pepper and salt. Hold the cilantro 🙂

    In summer, I love sweet tea vodka, margaritas or a good, cold beer.

    Oh my god, yes! All the avocados! And I love the suggestion from Jen about the corn! I make an avocado salad with corn and tomatoes, with a little olive oil and lime

  9. Definitely not jealous of your weather! Avocado lover here. I could eat one every single day. I like it on toast or in a tortilla with garlic salt. And yes to guacamole but no tomato but maybe some onion.

    Hot???? Yes, it’s hot and I’m not even thinking about running more than a few miles a week right now. I’m all about the wind in my face from a bike ride or the air conditioning at the gym!! hahaha!

    Wine? Yes, you had me at WINE! Honestly, I haven’t even tried any of the rose’ wines. I will have to do that this week! I’ve always been a red wine lover but lately with it being so dad gum hot and humid, I have been enjoying a nice chilled chardonnay! Have a great week MB and happy 4th!

  17. I heard there is an avocado shortage this summer and that is why the price is increasing. I can still get theme here for about $1 a piece. Just curious, what do they sell avocados for down there?

  18. We have been making homemade guacamole when we camp. I don’t much care for all the onions and tomatoes but as long as they are chopped up really fine I can eat them on a chip!
    Maybe one day I’ll get to pick off the avocados I grew! They are still going!

      I hope you tree project takes hold and grows super big! I have one huge tree and one skinny tree. The big one is dominant and has the fruit. I love being able to get them out of the yard!
